Cookie Cupcakes - #BakingWithSukilu

Hey everyone!

I wanted to do a quick and simple baking post for you today showing how you can make your very own cookie cupcakes!

I thought these would be a fun twist on your normal cookies and it means you can add your own topping and get real creative.


I added a caramel flavoured frosting on mine (you can find the recipe here, just add caramel sauce instead of vanilla extract to taste)

These are a fun desert to experiment with and are so quick and easy to make if you are in a rush!

Steps:

1) Pre-heat your oven to around 200 degrees Celsius/392 degrees fahrenheit. You will need 100g (3.5 oz) of butter, 150g (5.3oz) of flour and 50g (1.8oz) of caster sugar and 1 teaspoon of vanilla extract

2) Blend together the sugar and butter until fluffy and add the flour. Add any other ingredients you would like, such as chocolate chips

3) Set aside in the fridge for half an hour


4) Take some cupcake trays and grease with butter. Take some of your cookie mixture and press down in the base of your tray. Then take some more mixture and begin spreading it around the sides. Once you have your cupcake-esque shape place in the oven for around 10-15 minutes. Cook until a nice golden brown

5) Take your cookies out of the oven and allow them to sit and cool. Once cool simple turn over your cupcake tray and gently tap on the bottom. Your cookies should easily slide out


5) Finally take your topping and spread all over the top!
