Chocolate & Strawberry Truffles - #24DaysOfBlogmas Day 16

Hey everyone! It's day 16 of #blogmas and we've got a couple of baking posts lined up for you!

We wanted to make some small treats for you and your family. The first ones are chocolate and strawberry truffles which are super easy to make and they taste delicisous! I would definitely say these are more suited towards adults just because they are quite rich in flavour and a bit messy! But I'm sure children would love them just as much.



You can eat these and decorate them in so many different ways. Leave them just as a truffle you will have created a soft treat or cover them in chocolate and freeze for a chocolate surprise. Our other baking post is more for children so make sure you subscribe so you don't miss it!

Steps:

1) Break up 300g of dark chocolate (preferably 70% cocoa) into a large bowl. I would recommend having it out of the fridge for a while prior to beginning



2) Measure out 50g of unsalted butter into a pan. Cut it up into small piece or measure out a small spoonful at a time. This just makes the process quicker


3) Begin melting the butter over the hob. When it gets to about 90% melted add 300ml of double cream. Stir in with the butter. Heat until it begins to simmer



4) Once your cream and butter are simmering pour over the chocolate and stir to melt the chocolate. Once it is all mixed you should have a smooth but quite thick consistency 


5) Separate into bowls ready to add some flavours! I only wanted to do chocolate and strawberry but you could use more bowls to create more flavours. I left one ball as it is so it would just be plain chocolate. The other bowl I added a strawberry flavouring. I added a teaspoon at a time, mixed and tasted to see if I liked the taste. Keep adding your flavouring until you have the desired taste


6) Finally place your bowls in your fridge for at least four hours to set!

7) Once your mixture has set take it out of the fridge. Sprinkle some cocoa powder on a tray with greaseproof paper.  


8) Grab some flavourless oil - such an sunflower oil - and pour some into your freshly washed hands. Spoon a small amount of the mixture onto your hands and roll into balls. Roll into the cocoa powder to coat



9) Place into small casings and place into the freezer to make them cold. If you want to leave them like this you can keep them in the fridge. Be sure to eat within three days or freeze for about a month


10) To further decorate and add more chocolate goodness melt some chocolate into a bowl and take your truffles out your freezer. Using a cocktail stick coat your truffles in chocolate and place on greaseproof paper. You can put them back into the casing once properly set. We also added a small amount of dark chocolate on the top. Place back into the freezer to set the chocolate then take out and enjoy! 


Leave them as surprises for guests on what flavour they get!  You could also add some sprinkles or coconut on your truffles when you are putting the melted chocolate on.
