No Bake Vanilla Cheesecake! - Step by Step Tutorial

Hey everyone and welcome to another post. Can you believe the weekend is over already?!

I wanted to give you a bit of a break from my usual tutorials and show you something I love to cook up in the kitchen.

I love making cakes but one of my favourite kinds of cakes is cheesecake. I have made this vanilla no bake cheesecake for years and it is definitely a family favourite! It's such a simple desert but it's so tasty. I can also add little touches here and there to make it unique for any individual. 


What's amazing about this cake is that the only 'baking' required is to melt butter. These are the perfect treat for littles ones and they won't be waiting around for the cakes to cool down!

What you will need:
- 400g digestive biscuits
- 140g butter
- 400g philadelphia
- 300ml double cream
- 150g caster sugar
- A few drops of vanilla essence 

Steps:

1) The first thing you need to do is measure out 400g of digestive biscuits. You can use any style/flavour you would like. This is a good part to have a bit of an experiment. You will then need to break it up into breadcrums. You can simply do this with a wooden rollers and place the biscuits in a sandwich bag but I wanted mine finely milled. 



2) Melt 140g of butter over a low heat until it has all completely melted. Add to the biscuit crumbs and mix together well



3) Add the biscuit mixture into a lined tin, however big or small you want, and press down with a spoon to really pack it together. Put in the fridge to set


4) To create the creme for the top is very simple. You only need four ingredients. Obviously you can add as many as you would like to get any flavour you desire! 


Mix together 400g of philadelphia and 300ml of double cream until you have formed stiff peaks.


5) Add 150g caster sugar and a few drops of vanilla essence and mix all together. Give it a little taste to make sure it is to your liking. 


Simple yet this is one of the most delicious cakes I have ever made. I love the fact is requires no baking, except for melting the butter!

You could adapt the cake so much to fit your like. You could replace the vanilla extract with lemon, chocolate, orange or any other flavours you would like. You could also put a layer of jam between the biscuit and the creme. Or finally you could add an extra layer on top, say fruit for example.
